Why we exist
Thai food deserves a real kitchen behind it
Thai cooking travels badly when it is treated as a shortcut. Pastes get bought in, chilli gets flattened for a nervous market, and what arrives at the table is sweet, brown and forgettable. That is the gap MATA Thai Group was set up to close.
We work the way a Thai kitchen actually works: aromatics prepped fresh each morning, pastes pounded rather than poured, stocks built from bones, and the sour and salt adjusted at the pass instead of hoped for. The result is food that tastes of somewhere, served at a volume a commercial venue can sustain.
Frankston is where we are based, and the bayside and Peninsula trade is where most of our work sits — restaurants, function rooms, clubs, caterers and grocers who need Thai food handled by people who cook it every day.

Three things we will not trade away
Balance before heat
Chilli is one voice in a Thai dish, not the whole choir. We build fish sauce, palm sugar, lime and aromatics into balance first, then dial the heat to the room in front of us.
Honest sourcing
Galangal is not ginger, kaffir lime leaf is not a garnish, and holy basil is not sweet basil. Where an ingredient has no substitute, we source the real one rather than quietly swapping it.
Kitchens we would work in
Clean stations, written prep lists, sensible rosters and staff who are taught rather than shouted at. A kitchen that runs well is the only thing that makes good food repeatable.
