Five ways a Thai kitchen gets built, fed and supplied

Take one line or all five. Every engagement is scoped to your room, your equipment and your guests before a price is put to it.

What MATA Thai Group does

We are a working food business, not an agency. Everything below is something our own people carry out in a kitchen, a function room or a delivery van.

Thai kitchen operations

Restaurants · Takeaway · Bistro

We take responsibility for the back of house — designing the wok line, setting prep and par levels, writing the ordering schedule, building the roster and running service through the week.

  • Menu built to your equipment, extraction and cook numbers
  • Daily prep lists, par levels and waste tracking
  • Supplier ordering and stock rotation
  • Service-period management and pass control

Function and event catering

Weddings · Corporate · Community

Shared Thai banquet menus built for a table, plus canape and boxed formats where the room does not sit down. Cooked on site where there is a kitchen, transported hot where there is not.

  • Banquet, canape, buffet and boxed-meal formats
  • Vegetarian, vegan, gluten-free and nut-free menus planned in, not bolted on
  • Chilli levels set per menu so a mixed room is looked after
  • Service across Frankston, the Mornington Peninsula and bayside Melbourne

Thai pantry and produce supply

Venues · Caterers · Grocers

Kitchen-quantity supply of the staples a Thai menu cannot run without, delivered on a standing order or as needed, with substitutions flagged before they reach your bench.

  • Jasmine and glutinous rice, rice and egg noodles
  • Fish sauce, oyster sauce, tamarind, palm sugar, shrimp paste
  • Fresh galangal, lemongrass, kaffir lime leaf, Thai basil and chillies
  • House curry pastes in kitchen packs

Kitchen training and recipe development

Brigades · Owner operators

Hands-on sessions in your own kitchen teaching the technique behind the dishes, then the documentation that lets the team hold the standard once we are gone.

  • Paste pounding, stock building and wok heat control
  • Tasting for balance — salt, sour, sweet, heat, bitter
  • Recipe cards with gram weights, yields and plate-up photos drawn to spec
  • Allergen and cross-contact handling for Thai ingredients

Menu development and venue consulting

New rooms · Refits · Menu resets

For operators opening a Thai concept or resetting a tired one: menu engineering against your margins, kitchen layout and equipment advice, and a launch plan the floor can actually deliver.

  • Menu engineering with plate costs and target margins
  • Kitchen flow, equipment and extraction advice before you commit to a fit-out
  • Dish naming, menu wording and chilli signalling for an Australian room
  • Launch-week support on the pass

Getting a price

What we need to quote properly

Send these five things in your first email and we can usually come back with a menu and a real number rather than a range.

  • The date — or the trading days, if this is an ongoing kitchen engagement
  • Head count — and whether the room is seated, standing or a mix
  • The venue — suburb, and whether there is a working kitchen on site
  • Dietary requirements — allergies, vegetarian and vegan numbers
  • Budget per head — so we design to it instead of around it
